Amaretto is sweeter than almost anything else on your shelf, about 28% alcohol and loaded with sugar and that almond-marzipan perfume (which, fun fact, usually comes from apricot pits, not almonds). Sweet plus sweet turns to syrup, so the whole art of mixing amaretto is one word: acid. Give it something sour or bitter to push against and it’s terrific.

The short list

Lemon juice is the single best answer. Amaretto plus fresh lemon, roughly 2:1, shaken over ice, is the Amaretto Sour, and a properly made one (fresh lemon, egg white if you’re feeling ambitious) is a legitimately great cocktail, not a guilty pleasure.

Bourbon is the upgrade path. Half a shot of amaretto sweetens and rounds a pour of bourbon. Bartenders often beef up an Amaretto Sour with a bourbon float for exactly this reason.

Scotch makes the Godfather, the two-ingredient classic: equal parts over ice, done. Smoky and sweet, allegedly Marlon Brando’s drink.

Coffee loves almond. A shot in hot coffee replaces sugar entirely, and amaretto with cold brew over ice should be a much bigger deal than it is. Pair it with coffee liqueur and cream and you’re at the Toasted Almond, dessert in a rocks glass.

What to skip

More sweetness. Amaretto plus simple syrup, plus most fruit nectars, plus dessert wines, all turn to pancake syrup in a glass. It needs an opponent, not an ally.

Also cream in anything taller than a shot glass; it flattens the almond into liquid marzipan. The Amaretto Colada gets away with coconut cream only because 3 oz of pineapple juice brings the acid.
