What Drink Goes With Pizza? Cocktails, Beer and Soda by Style

What drink goes with pizza, by style: margherita, pepperoni, white, Hawaiian and buffalo chicken. Cocktails that cut cheese fat, plus beer, wine and soda.

I ran the bar at a pizza place for two years. Wood oven, pies out in ninety seconds, a drink list nobody had thought about. Most tables ordered Coke or a pitcher of lager. Fine. But I noticed something. The couples who got a Negroni with their margherita always ordered a second one. The guys who got a Long Island with pepperoni never finished it.

So I started steering people.

Why some drinks work and some don’t

Pizza means fat and salt. Cheese, olive oil, cured meat. By the third slice a film coats your tongue and everything tastes like everything. The right drink scrapes that off.

Acid does it. Lime, lemon, grapefruit. Same reason you squeeze lemon on fried fish. Carbonation scrubs too, which is why a plain cola feels right with pizza even though it’s a boring drink.

Then there’s bitter. Campari, Aperol, hops. A bitter sip resets you, and the next bite tastes like the first one. Italians drink Campari before dinner for a reason.

Skip creamy and skip very sweet. Cheese plus cream puts a lot of dairy in one mouth. I once watched a guy pair a Mudslide with a sausage pie. He looked sad by slice two.

Margherita wants something bitter

Sour tomato. Green, peppery basil. Fresh mozzarella, which tastes like sweet milk. You want a drink that sharpens all three and doesn’t bury them.

That’s the Negroni. Gin, Campari, sweet vermouth, an ounce of each, stirred and poured over one big cube with an orange twist. It’s strong. Three ounces of liquor and no juice. Sip it. The bitterness makes the sauce taste brighter, and every bite of cheese sets up the next sip.

Too much for a Tuesday? Lose the gin and add soda water. Now you’ve got the Americano Highball, sweet vermouth and Campari with a lemon wedge. Simpler still, the Campari Soda. Two ingredients. I made a hundred of those for the kitchen crew after close.

Gin drinkers who want to play around should read our Negroni variations. The Aperol version is a good gateway for people who think Campari tastes like medicine.

Pepperoni, sausage and the Paloma argument

Pepperoni sweats orange oil. Spicy, salty, greasy. Bitter drinks get lost in that. Here you need acid and salt.

Best pizza drink I know? The Paloma. Two ounces of tequila, half an ounce of lime, a pinch of salt, topped with grapefruit soda in a tall glass. Grapefruit’s a little bitter, the soda fizzes, and the salt somehow makes the meat taste meatier. People argue with me about this. I don’t care. Order one.

Beer person? Make a Michelada. Beer, lime juice, hot sauce, a dash of Worcestershire, salt and chili powder on the rim. It’s savory and cold and with a hot sausage pie it’s ridiculous. The Michelada Cubana swaps in Clamato and Tecate. You’ll love it or spit it out. No middle ground.

White pizza

No sauce. Ricotta, mozzarella, garlic, maybe arugula. All fat and no acid on the plate, so the glass has to bring it.

Aperol Spritz. Three parts Prosecco, two parts Aperol, a splash of club soda, orange slice. It’s low in alcohol, orangey, a little bitter, and it fizzes straight through the cheese. Our full Aperol Spritz recipe gets into glass size and ice if you care.

Drier option: the Negroni Sbagliato. Campari and sweet vermouth topped with sparkling wine instead of gin. Sbagliato means “mistaken” in Italian. Good mistake.

Yes, Hawaiian

Pineapple on pizza is fine. Fight me somewhere else. Ham and pineapple are already sweet and salty, though, so a sweet drink just doubles the sugar. Go sour.

A real Margarita. Blanco tequila, Cointreau, fresh lime, roughly two to one to one, shaken hard. Salt rim if you want it. Don’t make the Italian Margarita here, the one with amaretto and sweet and sour mix. Good drink. Too much candy next to pineapple.

Buffalo chicken is a beer pizza

Buffalo sauce: hot sauce and butter. Then somebody drizzles ranch on it. It’s wings in pizza form, so drink what you drink with wings. Cold beer.

Bored of plain beer? Our Shandy mixes beer and ginger ale, half and half. The ginger plays nice with the heat and it’s light enough to keep sipping. More along those lines in our easy beer cocktails list.

Beer and wine, one line each

Beer: a crisp lager or pilsner with any pie, a hoppy IPA with buffalo or pepperoni, where the bitterness has something to push against.

Wine: Chianti or another Sangiovese with anything in red sauce, or a dry Lambrusco if you want red wine with bubbles.

Quick ones people ask me

What soda goes with pizza? Cola, honestly. Grapefruit soda if you want acid, and it’s half a Paloma already. Lemon-lime works. Root beer? I’ll let you make that call alone.

What’s the best mixed drink with pizza if I only own one bottle? Tequila. Lime, salt and grapefruit soda from the corner store and you’re done.

Is wine or beer better? Beer, for most pizza. Bubbles plus bitterness. Wine wins with a really good margherita.

What you can make tonight
