Sweet Vermouth
Sweet vermouth (also called Italian vermouth or rosso) is a fortified wine flavored with a blend of botanicals and sweetened with sugar or caramel. It’s a key ingredient in the Manhattan and the Negroni. Carpano Antica Formula is considered top-shelf; Cocchi Vermouth di Torino is another favorite among bartenders. Like dry vermouth, it’s wine-based and should be refrigerated after opening. A bottle left in the back of a warm cupboard for six months is going to taste like wet cardboard.
