Sugar

Granulated white sugar is called for in recipes like the Old Fashioned, where you muddle a sugar cube with bitters and a splash of water. It’s also the base for making simple syrup, which is the more practical way to sweeten cold drinks. Demerara and turbinado sugars — the coarser, less-refined brown varieties — add a richer, almost toffee-like sweetness and are popular in tiki drinks. Sugar rimming (think Lemon Drop) is another common bar use.
