Scotch Whisky
Notice there’s no ’e’ in whisky — that’s the Scottish spelling, and they’re particular about it. Scotch must be made in Scotland and aged at least three years in oak casks. Blended scotch like Johnnie Walker or Dewar’s is what you want for cocktails — a Rob Roy is basically a Manhattan with scotch, and a Penicillin uses blended scotch with honey-ginger syrup and a float of smoky Islay. Save the single malts for sipping. Peaty or smoky scotch in cocktails is a bold move — a little Laphroaig goes a very long way.
