Prosecco

Italy’s answer to Champagne has become the go-to sparkling wine for cocktails, mainly because it’s affordable and doesn’t make you wince when you mix it with other things. An Aperol Spritz runs on Prosecco, and a Bellini is just Prosecco with white peach puree — invented at Harry’s Bar in Venice. Unlike Champagne, Prosecco is made using the Charmat method, giving it lighter, fruitier bubbles. Grab a bottle of Prosecco DOC for cocktails; save the Prosecco Superiore DOCG for drinking on its own. Always keep it chilled and open it right before you need it.
