Orgeat Syrup
If you’ve ever had a Mai Tai and wondered what gives it that distinctive nutty-sweet flavor, that’s orgeat. Pronounced “or-ZHAT,” this almond syrup has roots in French and Mediterranean cooking but found its true calling in tiki cocktails. Small Hand Foods and Liber & Co make excellent bottled versions. You can also DIY it with blanched almonds, sugar, and a touch of orange flower water. Beyond the Mai Tai, try it in a Japanese Cocktail or a Trinidad Sour. Refrigerate after opening — it spoils faster than simple syrup.
