
How Long Does Simple Syrup Last? 1:1 vs Rich Syrup, Plus a Vodka Trick
Every home bar eventually acquires a mystery jar: simple syrup, made for a party, shoved to the back of the fridge, discovered months later looking slightly less clear than you remember. Whether it’s still good comes down to a decision you made before you even boiled the water. The ratio.
The ratio is the shelf life
Standard 1:1 syrup (equal parts sugar and water by volume) keeps for about a month in the fridge in a clean, sealed container.
Rich 2:1 syrup (two parts sugar to one part water) keeps for up to six months refrigerated.
That’s a huge difference for one extra cup of sugar. The reason is that sugar at high enough concentration is a preservative: it binds up the water that mold and yeast need to grow, the same trick that keeps jam and honey stable. A 1:1 syrup is dilute enough for microbes to get a foothold; a 2:1 syrup is hostile territory.
Rich syrup is also just more practical. It’s sweeter per ounce (use about ⅔ the amount a recipe calls for), it pours faster from the fridge, and it waters your drink down less. Most bars quietly use it for exactly these reasons.
How to tell it’s gone
Hold the jar up to the light. Toss it if you see:
- Cloudiness or haze in a syrup that started clear
- Anything floating: wisps, specks, or a raft on the surface (that’s mold)
- A fizzy or boozy smell, which means wild yeast has moved in and started fermenting

Stretching it further
Add a bit of vodka. Half an ounce to an ounce of vodka per cup of syrup raises the alcohol just enough to slow spoilage without changing how your drinks taste. This buys a 1:1 syrup several extra weeks.
Start clean. Pour hot syrup into a container you’ve just run through the dishwasher (or rinsed with boiling water) and seal it while warm. Most syrup spoilage is seeded by the funky squeeze bottle it went into.
Label the jar. Masking tape, date, ratio. Future you, holding the jar up to the light, will be grateful.
Flavored syrups play by shorter rules
Once you infuse a syrup with anything organic, the clock speeds up. Herb syrups (mint, basil, rosemary) are best within 1 to 2 weeks. Fruit syrups are the shortest-lived of all, since the pulp brings water, sugars, and its own microbes: a week, maybe two if you strained it well. Ginger, cinnamon, and other hardy spice syrups land somewhere in between. When a flavored syrup starts smelling more like kombucha than like its ingredients, it’s done.
Store-bought syrups with preservatives last far longer; check the label and don’t apply homemade rules to them.

Why did my simple syrup get cloudy?
Cloudiness in a previously clear syrup means microbial growth, usually mold or yeast getting started. Toss it. (A syrup that was faintly hazy from the beginning may just have impurities from the sugar, but a change is the red flag.)
Can you freeze simple syrup?
Yes, and it works well: freeze 1:1 syrup in an ice cube tray, then bag the cubes; they keep for months and thaw in minutes. Note that rich 2:1 syrup resists freezing solid in a home freezer (it just gets very thick), so freeze the standard ratio.
How long does simple syrup last unrefrigerated?
Days, not weeks. If a bottle sat out overnight it’s fine; if it lived on the counter through a warm week, inspect it closely before it goes anywhere near a drink.
