Hennessy Drinks: The Named Recipes, and What to Order at a Bar
Nobody in a crowded bar orders cognac. They order Henny.
I poured a lot of it. Saturday nights, three deep at the rail, maybe a third of my tickets had that word on them. Neat, rocks, or “with something,” and that last one covered a lot of ground.
This is the list of named drinks, the ones with an actual recipe behind them. Mixers are a separate conversation. Ginger ale versus cola versus iced tea, ratios, which grade to use: that’s all in our guide to what to mix with Hennessy. Here we’re talking drinks with names.
The bottle, quickly
Hennessy is cognac. Grape brandy from the Cognac region of France, double distilled, aged in oak. The house goes back to 1765 and an Irishman named Richard Hennessy.
Most bars pour VS. That’s the youngest grade and it’s built for mixing. VSOP is rounder and costs more. XO goes in a snifter. Not a highball. I’ve watched people pour XO into Coke at a birthday table and I still think about it.
What to order when the bar is slammed
You want a drink a bartender can make without thinking. Here’s my short list.
Henny and Coke. The Hennessy and Coke is the default for a reason. One part cognac, three parts cola, ice, lime if they have it. Better still: ask for Cherry Coke. The cherry and the grape get along. Most bars won’t have it on the gun, but you’ll find it in a can at home.
Henny and apple. Sounds like a kid’s drink. It isn’t. Brandy and apple have been partners since before cocktails had names. The Hennessy and Apple is two ounces of cognac and three of apple juice in a rocks glass. That’s it. Every bar has apple juice somewhere, even if it’s in the back for the kids’ menu.
Henny and pineapple. People search for this one constantly, and it’s a good instinct. Pineapple is the best juice partner cognac has. Say “Hennessy and pineapple, shaken” and you’ll get a little foam on top that makes it look expensive. If the bartender has a minute, ask for an Electric Relaxation: Hennessy, pineapple and triple sec, shaken hard. Swap the triple sec for Tuaca, a vanilla-citrus liqueur, and it becomes the Marvin Hagler. It drinks softer, and I liked it more than I expected to.
Henny and Red Bull. Our index calls it Crunk Juice, after the Lil Jon album, which tells you exactly what year it was. I’ll be honest about this one. Caffeine hides how drunk you are. I cut people off faster on these than on anything else I poured. Have one. Then switch.
What not to order at a slammed bar: a Sidecar. It’s a great drink. It’s also a shaken, measured, sugar-rimmed drink, and you’ll wait. Make it at home, and read which cognac actually works in a Sidecar before you do.
The ones worth making at home
Hennessy Alexander
The Hennessy Alexander is a Brandy Alexander with the label showing. White crème de cacao, cream, Hennessy, grated nutmeg on top. I make it equal parts, an ounce each, shaken with ice until the tin hurts your hands. Strain into a coupe. It’s dessert. Don’t have two.
Hennessy Martini
Not a martini. Nothing like one. The Hennessy Martini is cognac and lemon juice, served up. On its own that’s sharp, so I add a little sweetness. My build: two ounces Hennessy, half an ounce of lemon, a barspoon of simple syrup. Shake. Strain into a chilled glass. Lemon twist. Clean, dry, a little bracing. The drink for people who say they don’t like sweet cocktails.
Honnessey
Lemon, honey and Hennessy. The Honnessey is basically a Bee’s Knees that went to France. One tip. Thin the honey first, one part honey to one part warm water. Cold honey hits ice and turns to a rock at the bottom of the shaker. Two ounces cognac, three quarters honey syrup, three quarters lemon.
French Port
Two ingredients. Hennessy and tawny port. The French Port gets stirred, two parts cognac to one of port, and poured over one big cube. Nutty, dried fruit, warm. This is the November drink. I’d put it next to a fire and leave it there.
The Hennessy Sunrise question
Lots of people go looking for a Hennessy Sunrise. We don’t carry that exact recipe. The usual build is simple enough to describe: a Tequila Sunrise with cognac standing in for tequila. An ounce and a half of Hennessy, four ounces of orange juice over ice, then a quarter ounce of grenadine poured down the inside of the glass so it sinks. Red at the bottom, orange on top. Don’t stir it or you lose the whole point.
What we do have is the Henny Sunrise, and it’s a different animal. Hennessy, cola, sweet and sour mix, grenadine. It’s darker and sweeter, but the red layer’s still there. If you like a Henny and Coke but want a sour edge, try it.
A few from the club years
Hennessy picked up a lot of strange friends in the 2000s. The Incredible Hulk is the famous one, Hennessy and blue Hpnotiq turning green in the glass. It’s been written up to death, so I’ll leave it.
The better one nobody orders is the Continental #2: Hennessy, Grand Marnier, cranberry and pineapple. Shake it. It’s a cognac punch for one, and it scales up into a bowl without any trouble. I made a batch of these for a staff party once. Gone in an hour.
And the Babygirl, Hennessy with Baileys and Kahlua over ice, is a White Russian that put on a nicer coat. It goes down too easy for something that strong. Pace yourself.
If you’ve got more than Hennessy
Most people do. A bottle of cognac and a half-empty fridge can make more than you’d guess. Punch what you have into Cocktail Builder’s ingredient search and it’ll show you what’s makeable tonight. If you’d rather go up a shelf, the wider list of cognac cocktails covers the classics, Sidecar family and all.
Last thing from behind the bar. The best Henny drink I ever served was a guy’s first. Two ounces over one rock, nothing else, and he looked at the glass like it owed him money. Then he finished it slowly. Start there sometime.
