Grapefruit Juice

Fresh-squeezed grapefruit juice has a bitter-tart punch that sets it apart from other citrus juices behind the bar. It’s the backbone of a Paloma — tequila, grapefruit, and lime — which outsells the Margarita in Mexico. A Greyhound is just vodka and grapefruit juice, and salt the rim to upgrade it to a Salty Dog. Ruby red grapefruits give you sweeter, pinker juice, while white grapefruits are more bitter and acidic. The bottled stuff works in a pinch, but fresh is noticeably better. One large grapefruit yields about six ounces of juice, which is enough for two cocktails.
