
Does Baileys Go Bad? The 2-Year Guarantee, Explained

Somewhere in your cabinet there’s a bottle of Baileys that comes out every December, pours three drinks, and goes back into hiding. Whether that arrangement is safe depends on one number printed right on the bottle.
Baileys is made with real Irish dairy cream, and cream does what cream does, whiskey or no whiskey. The alcohol (the finished liqueur is 17 percent) preserves it far longer than the carton in your fridge would ever manage, but it doesn’t preserve it forever.
The short answer
The maker guarantees Baileys for two years from the bottling date, opened or unopened, as long as it’s stored between 0 and 25°C (32 to 77°F) and out of direct sunlight. Look for the lot code and best-before date printed on the bottle, usually on the back label or the neck. That date is the real answer for your specific bottle; everything else is a rule of thumb.
Two things follow from that guarantee that surprise people:
- Opening the bottle doesn’t reset the clock. An opened bottle stored decently is covered by the same two years as a sealed one.
- Refrigeration isn’t required. It helps the flavor stay fresh, and we’d still recommend it after opening, but “cool cupboard” meets the spec.
Heat is the actual enemy. A bottle that spent a summer in a hot garage or a car trunk can be gone well before its printed date.

What the table can’t show is temperature history. Two bottles with the same printed date are not the same bottle if one of them rode around in a trunk in August. When you don’t know where a bottle has been, the smell test outranks the label.
Storage habits that actually matter
- Wipe the threads and cap it tight. The crust of dried cream on the neck is where the funk starts, not the liquid inside.
- Don’t freeze it. At 17 percent alcohol Baileys starts to freeze around -7°C, so a home freezer at -18°C turns it solid and the emulsion can split on the way back. That’s why the guarantee bottoms out at 0°C.
- Buy the size you’ll finish. Baileys comes in 200 mL and 375 mL. If the litre from three Christmases ago is still half full, that’s the answer.
How to tell if Baileys has spoiled
Pour a little into a glass first, never straight into a drink you’ve already built. Spoiled cream liqueur announces itself:
- Lumps or curdled texture that don’t swirl away
- A sour, cheesy smell instead of chocolate and vanilla
- Separation into a dark layer and a thick sludge that shaking won’t fix
- A swollen or bulging cap
Any of those, pour it out. This is the one bottle on the bar shelf where “when in doubt, throw it out” applies literally, because unlike a faded whiskey, spoiled dairy can genuinely make you sick.
One important false alarm: Baileys curdling in a drink is usually chemistry, not spoilage. Mix it with anything acidic (citrus, tonic, some sodas) and the cream curdles on contact even when the bottle is perfectly fine. That’s how the infamous Cement Mixer shot works. Blame the recipe, not the bottle.
What about other cream liqueurs?
The same logic covers RumChata, cream-based Christmas liqueurs, and the supermarket Irish creams: check the printed date, keep them cool, and expect roughly 6 months to 2 years depending on the brand. Homemade Irish cream is a different animal entirely; with fresh cream and no commercial homogenization, it’s a fridge-only, use-within-two-months project. Cream is the exception on the liqueur shelf. Use up a bottle that’s getting close
Each of these makes a dent in a bottle with three months left. The one rule, from our Baileys mixer guide: nothing acidic in the glass.
- Bailey’s White Russian: 2 oz Baileys, 2 oz vodka, 3 to 4 oz milk over ice. Two ounces a glass is the fastest legitimate route through a bottle.
- Nutty Irishman: an ounce each of Baileys and Frangelico in 6 oz of coffee. Irish coffee for people who don’t want whiskey in their coffee.
- B-52: Kahlua, Baileys, and Grand Marnier in equal layers, poured in that order.
- Oatmeal Cookie: Baileys, butterscotch schnapps, and cinnamon schnapps, shaken and strained. The schnapps do the cookie impression; the Baileys is the glass of milk.
- Baby Guinness: a shot of Kahlua with a float of Baileys for the head. Uses the least Baileys of the five, so save it for the last inch.

Why did my Baileys curdle in a cocktail?
Acid. Citrus juice, tonic water, and other acidic mixers curdle cream on contact regardless of the bottle’s condition. If it curdles in the glass but tastes fine from the bottle, the Baileys is healthy.
