Dirty Lemonade, and Why Everyone Means Something Different

Three ingredients, one name, and at least four versions depending on the bar. The original dirty lemonade plus the variations worth knowing.

We get asked about this one more than almost anything else, and the honest answer is that it depends who taught you.

In most of the country a dirty lemonade is vodka, lemonade, and a splash of lemon-lime soda. That is the version we keep, and it is the one on our shelf: Dirty Lemonade, three ingredients, no shaking required. The “dirty” is the cloudiness the soda brings, nothing more sinister than that.

Walk into a bar in the Midwest and you might get something else entirely. Somewhere along the way the name attached itself to any lemonade with liquor in it, which means you can order one twice in the same city and get two different glasses.

The one we mean

Fill a tall glass with ice. Vodka, then lemonade almost to the top, then a finger of lemon-lime soda floated over it. Do not stir hard. Half the appeal is the cloudy layer that hangs in the middle for a minute before it gives up.

Real lemonade beats concentrate here, and it is not close. Concentrate is sweeter and thinner, and the drink turns into syrup with a kick. If all you have is the powdered stuff, cut it with more water than the package says and add a squeeze of fresh lemon at the end.

The Alpine is the one that gets people. It looks like a fruit punch and drinks like one, and it has three white spirits in it. That is a long island in a summer dress. Treat it accordingly.

Making a pitcher

This scales well, which is most of why it survives. For eight people we go with roughly a cup and a half of vodka, six cups of lemonade, and a bottle of lemon-lime soda added at the very end. Add the soda early and by the time the second round comes around it has gone flat and sad.

Keep the ice separate. A pitcher full of melting ice is a pitcher of weak lemonade in forty minutes, and nobody wants to be the person who made the weak lemonade. Our notes on how long batched cocktails last go into what actually degrades and how fast.

A note on the lemonade itself

Fresh lemon juice fades. It is bright for a few hours and then it turns dull and slightly bitter, and no amount of sugar fixes it. If you are squeezing lemons for a party, squeeze them the same day. We got into the details in how long fresh lime juice lasts, and lemons behave much the same way.

What it is good for

Hot afternoons and long tables. It is not a drink that rewards attention, and that is fine. Some drinks are for tasting, some are for handing to eleven people in a backyard, and there is no shame in owning the second kind.

One last thing about the name. Nobody knows where it came from. It appears on menus by the mid-2000s with no obvious origin, and the most likely explanation is the dullest one — somebody looked at a cloudy glass, said the word, and it stuck.
