Dark Rum

Dark rum gets its color and deep flavor from longer aging in charred oak barrels, or sometimes from the addition of caramel coloring. It has a heavier body than white rum, with notes of molasses, caramel, and spice. You’ll find it in the Dark ’n’ Stormy (where Gosling’s Black Seal has a trademark claim), the Mai Tai, and various tiki drinks. Myers’s from Jamaica is another classic choice. Dark rum also works well in cooking — it’s the standard for rum cake and bananas Foster.
