Dark Rum Cocktails Worth the Bottle

Dark rum shows up in 461 of our recipes and most people only know one. The Dark and Stormy, yes — but also the drinks white rum can't touch.

White rum gets the daiquiri. Spiced rum gets the pirate marketing. Dark rum gets ignored, and dark rum is the best of the three.

I’ll die on this hill. It’s a comfortable hill with 461 drinks on it, and I’ve poured most of them.

What dark actually means

Molasses, mostly. Longer aging, heavier stills, sometimes caramel color doing cosmetic work. The flavor runs toward brown sugar, coffee, dried fruit, a little funk if you’re lucky.

That weight is the point. White rum disappears into a drink. Dark rum shows up to it.

Start here: the Dark and Stormy

Two ounces dark rum, ginger beer to fill, squeeze of lime. Build it in the glass, rum floated on top if you want the postcard look.

The bite of good ginger against that molasses depth is one of the great two-ingredient arguments in drinking. Goslings will tell you it must be their rum. Goslings owns a trademark, not your kitchen.

The tiki backbone

Every serious tiki drink runs on dark rum somewhere in the stack. Not always alone — the classic move is blending it with light rum so you get depth and lift at once. The Brazilian Daiquiri pulls exactly that trick with brown sugar and vanilla riding along.

Mai tais, zombies, painkillers, hurricanes. All of them are dark rum wearing flowers.

The dessert wing

This is where dark rum has no competition. Cream and molasses were made for each other.

The Alexander Baby is dark rum, crème de cacao, and cream — a Brandy Alexander that traded up. The Angel’s Treat runs amaretto and whipped cream over it with cocoa on top. And the Almeria does coffee liqueur and egg, which sounds like 1974 and drinks like velvet.

Hot weather, cold weather

Summer: dark rum and pineapple, or the Abilene — rum, peach nectar, orange juice. Lazy and correct.

Winter: hot buttered rum wants dark rum specifically. So does anything with apple cider in it. So does eggnog, and I don’t care what your family recipe says, bourbon eggnog is settling.

Buying advice from a guy who stocked the well

You need one bottle around twenty-five bucks. Not the plastic-handle stuff — that’s caramel-colored white rum and it mixes like wet cardboard. Not the forty-dollar sipper either; mixing it is a waste of somebody’s barrel program.

Look for the word “aged,” a real country of origin (Jamaica, Barbados, Guatemala, Martinique), and a proof at 80 or better. Blackstrap is its own beast: intense, almost savory, brilliant in small doses, overwhelming as the base.

One more thing. Dark rum keeps basically forever unopened, so buying a backup bottle when it’s on sale is strategy, not hoarding.

Dark and Stormy tonight. A blended-rum tiki thing this weekend. Something with cream when the weather turns.
