Cream

Heavy cream (or whipping cream) transforms cocktails into dessert territory. A White Russian floats cream over vodka and Kahlua, while an Irish Coffee gets a collar of lightly whipped cream. For shaken drinks like a Ramos Gin Fizz, heavy cream emulsifies into a silky texture you can’t get any other way. Half-and-half works as a lighter substitute. Always use fresh cream — anything close to its expiration date can curdle when it hits citrus or high-proof spirits, and that’s a mess nobody wants. Shake hard when cream is involved; it needs the extra agitation to blend properly.
