Coconut Cream

Don’t confuse coconut cream with cream of coconut — the cream is thick, unsweetened coconut fat, while cream of coconut (like Coco López) is the sweet, syrupy stuff you actually want for a Piña Colada. Both show up in tiki recipes, so read carefully. Coco López was invented in Puerto Rico in the 1950s and basically created the Piña Colada as we know it. Shake hard with ice to emulsify properly, or your drink separates into sad layers. It also works beautifully in a Painkiller with navy rum.
