Cinnamon
Ground cinnamon or cinnamon sticks show up in cocktails more than you’d expect. A stick in your Hot Toddy or mulled wine is a classic move, but cinnamon syrup opens up even more possibilities — try it in a whiskey sour or an old fashioned variation. Make your own by simmering sticks in simple syrup for 20 minutes. Ceylon cinnamon is milder and more complex than the common cassia variety. Dust it on top of eggnog or a flip for presentation. It bridges the gap between sweet and spicy in fall and winter cocktails.
