Agave Syrup
Agave syrup (or agave nectar) is the go-to sweetener for tequila and mezcal cocktails because it comes from the same plant. In a Tommy’s Margarita — tequila, lime, and agave — it replaced the traditional triple sec and became the modern standard. It dissolves more easily in cold liquids than regular sugar, which makes it practical behind the bar. Light agave has a neutral sweetness; dark agave adds a slight caramel note. Dilute it 1:1 with water for a thinner consistency that mixes faster. Keep a squeeze bottle on your bar cart year-round.
